Healthy Chicken

Ok, this post has to be quick, I'm getting a facial in 20! YESSSSSS

But before I get started with this post, I want to say thank you so much for all of your kind words and support through my last struggle. Of course I'm not giving up, not yet anyway. I just needed to hear the reasons why I can't give up right now, because I'd forgotten them. Anyway...

I also wanted to post the recipe that my twitter friend, @ameliawoods and I will be making this weekend. We decided one day to both make the same recipe in the same evening, just for fun. It will be a healthy recipe, and we encourage anyone who wants to join us to join! Saturday night...are you ready??? We're doing an easy chicken dish...it's a weight watchers recipe for Lemon Glazed Chicken with Mushrooms. Here's the recipe:

Lemon Glazed Chicken with Mushrooms

Prep time: 2 minutes Cook time: 9 minutes
Points: 4

1 1/2 pounds chicken cutlets (about 8 cutlets)
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
3 tablespoons fresh lemon juice, divided
Cooking Spray
1 (8 ounce) package sliced fresh mushrooms
2 garlic cloves, minced
1/2 cup fat-free, less-sodium chicken broth
2 tablespoons chopped fresh flat-leaf parsley
1 tablespoon drained capers
Lemon wedges (optional)

1) Sprinkle chicken with salt and pepper; drizzle with 2 tablespoons lemon juice
2) Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add chicken; cook 2 to 3 minutes on each side or until chicken is browned. Remove chicken from pan, and keep warm.
3) Add mushrooms and garlic to pan; saute 3 minutes or until mushrooms are tender. Add remaining 1 tablespoon lemon juice, chicken broth, parsley, and capers. Return chicken to apn. cook, uncovered, 2 to 3 minutes or until thoroughly heated. Garnish with lemon wedges, if desired.

Yields 4 servings

  2. Ooooh yum. I would but bf won't eat mushrooms (man he sucks). Count me in for the next one though, and let me know how it turns out, good luck!!

  4. Lol, I hate mushrooms. But I will just leave those out. I don't know what capers are, but I will google it. But I'm excited about cooking together. I will keep Tweetdeck open while cooking so we can chat about anything.

    The recipe sounds good; would prefer if Emeril or Wolfgang would stop by and whip it up for me, though.

    Capers are flower buds from a bush that are pickled in vinegar. Seriously! No calories. They are like tangy little olives, but firmer and no fat.
