I need some new recipes as well. I've been trying to eat more Vegan lately, although I haven't passed all the way over quite yet. I'm so close, I've really been careful about what I'm eating, and watching every bite. But I'm running out of things to eat! I bought a vegetarian magazine AND a vegan recipe book at Barnes and Noble, but some of the recipes seem to take so much work...and anyone who knows me - knows I'm a simple creature. I don't eat until I'm hungry, and once I'm hungry, I'm ready to eat...not spend an hour making lightly-fried coconut tempeh. I need simple and quick. And tasty. They say (who's they? I don't know) that most people usually only eat about 12 dishes, they rotate them, so I'm trying to find at least 10 dishes that I like that are simple and easy to make so I can at least survive as a Vegan. Otherwise I'm going to crash and burn quickly, cause I get bored super quickly.
But I have to remind myself..this is how it goes! This is weight loss- digging in for the long term and learning to be patient. Finding recipes, finding new workouts, continually MAKING AN EFFORT. If I've learned anything about weight loss- it's this. I am NOT one of those girls where the weight just "falls off". I think most of us don't fit in this category, or we wouldn't be here. So, if that's the case...then we have to make an effort to make it happen. We have to stay focused. We have to keep weight loss in the forefront of our minds...or it slips away, and we're gaining again.
Ok, I have to hop in the shower. Day 3 beginning!
